Easy Individual Meatloaf Muffins Recipe

Looking for something quick and easy to add to your meal plan or on a weeknight? I have just the thing! We love meatloaf but it always takes so long to cook all the way through. I have found a way to make it go much quicker and it also results in easy leftovers: Meatloaf Muffins!

Easy Individual Meatloaf Muffins Recipe



  • 2lbs lean ground beef {make sure you get pretty lean beef. Once I made the mistake of getting a cheaper kind and it didn’t turn out well when all the grease/fat came out!}
  • 3/4 cup italian breadcrumbs
  • 2 eggs
  • 3/4 can of tomato sauce
  • 1 packet of dry onion soup mix
  • 1 cup Shredded Cheddar Cheese
  • Water {if you feel like it’s not moist enough}


  1. Pre-heat oven at 350*.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, tomato sauce, soup mix and cheese.
  3. Mix together very well, I just end up using my hands, there is no better way!
  4. Take 12 cup cupcake pan and grease, I sprayed mine with olive oil.
  5. Form the meat into a ball about the size of your palm of your hand and the size of the cupcake pan. They don’t really expand much in the oven, so make sure they aren’t too small in the pan. Do this until all the meat is gone.
  6. Before putting in the oven, I put a little ketchup on top, or you could put a little more tomato sauce, if you prefer.
  7. Bake in oven for 30 minutes or until cooked all the way through. At 30 minutes I cut one in half and usually they are done! The bigger they are, the longer they will take.
  8. That’s it! We serve with vegetable and potatoes.

They are super easy and very easy to use as individual leftovers. Lennox loves them as well. She ate one up in the matter of moments! I call that a win!

    I love to do my meatloaf this way. Quicker to cook and easy to neat up leftovers! Haven’t thought to Dd onion soup mix. Will have to give that a try!

      It really is so much easier – the onion mix gives it more flavor! You could add onions and other veggies too, but I didn’t have any that went with it.

    These muffins sound delicious, I am going to make them for dinner tonight for our anniversary dinner.

    I do have one question, on the tomato sauce is it an 8 oz or 15 oz can?

      15oz can – you can kind of eyeball it – you don’t want it TOO moist but not too dry. And the leaner the beef, the better. If its real fatty meat, it will get greasy and leak over in the oven!

    These are great! I love that they don’t take as long to cook! I put them in pink muffin holders,I also added onion & substituted ragu for tomato sauce because that’s what I had on hand.thanks for the recipe!!
