Velveeta Chicken & Cheese Skillet Recipe

Dinner time in the Terrell household can be a little hectic – not because we have 5 kids to make dinner for or we have a crying baby and a complaining teenager (ok maybe we have a complaining, crying 3-year-old) but because we both have to work full-time so by the time we get home from work and picking up Lennox from school – dinner is the last thing we feel like making. So that being said I’m always looking for new and easy, yet delicious recipes for the family.

Sunday, we decided to try out a new recipe, Velveeta Chicken & Rice Skillet Dinner. Velveeta is yummy and honestly, I don’t think I’ve ever had anything bad that was made with Velveeta. It’s a sure thing! We stopped at Walmart {you can see photos from our shopping trip in my Google + album} while out doing errands and then headed home to make dinner.

I had high hopes for this recipe for being easy and yummy – and that it was!

So here is what you need to do for this easy Velveeta skillet dinner! You will need olive oil, chicken breasts, Velveeta Cheese (of course), Cream of Chicken Soup, Instant Rice, Water and seasonings. See the recipe at the end of this post for the exact amounts of everything.

All you will need to cook this meal is a Skillet – easy enough and less dishes for you to do after dinner! Add the oil and chicken to the skillet and cook the chicken thoroughly.

Once the chicken is cooked completely on both sides, remove from skillet and set aside. Add in the can of soup, water and let boil. Once at a boil, add in the instant rice and let simmer for 2-3 minutes. Then add in all the cheese. I cubed the cheese when cutting up, to let it melt quickly. Mix everything together and season as needed with minced onion and garlic powder. Cook until rice is tender.

Add the chicken back in for a few minutes and then you are ready to serve! Pair it with a salad or veggies and you are good to go!

I’m happy to report that the meal was a success. It was easy, delicious and for Lennox it was a hit! It included all things she loves! Veggies (I’m so lucky she loves veggies), Rice, Cheese and Chicken!

Velveeta Chicken & Rice Skillet Dinner

Ingredients

  • 1 tablespoon olive oil
  • 2-3 large boneless chicken breasts cut into strips.
  • 1 can cream of chicken soup
  • 1 1/2 cups water
  • 2 cups uncooked instant white rice
  • 10-12 ounces Velveeta cheese - cubed
  • Minced Onion Flakes
  • Garlic Powder

Instructions

  1. Add oil to skillet and heat up.
  2. Add chicken and cook completely on both sides (5-6 minutes on both sides depending on thickness)
  3. Once chicken is completely cooked, remove and set aside.
  4. Add in water and soup and bring to a boil.
  5. Add in rice and let simmer, stirring occasionally for 2-3 minutes.
  6. Add in Minced Onion Flakes and Garlic Powder to taste (not too much!)
  7. Add in cubed Velveeta cheese
  8. Simmer, stiring occasionally until cheese is melted and rice is cooked.
  9. Add chicken back in and mix together and you are ready to serve!
