It’s sum-sum-summertime! With summer brings long evenings of fun outside, easy dinners, family time and cold desserts (read, ICE CREAM!). This weekend we kicked off the summer by having an easy, yet delicious dinner – Bacon Bleu Burgers, Refreshing Iced Tea and an Ice Cream Treat from Klondike and Ben & Jerrys! Everything I got was from our local Walmart too!
Before I even started making dinner – I made a fresh pitcher (check out this awesome new mason jar pitcher I got at Walmart) of Lipton Fresh Brewed Iced Tea. I never enjoyed iced tea as a kid but I love it now. It’s a staple of the south. Lennox loves unsweet tea, as much as Kyle & I do too!
Once I had a cool drink, it was time to get dinner going for the family. We made an All-American meal that consisted of one of the best bacon bleu cheese infused burgers we have made! This recipe is easy, but I thought I would share with you how we made it, so that you can do the same this summer.
What you will need:
- Lean Ground Beef
- Bleu Cheese Crumbles
- 1 tsp. Minced Garlic
- Salt / Pepper
- sautéed Jalapenos (optional)
- Hamburger Buns
- Any other toppings you like on your burgers!
You can cook these burgers any way you wish (George Foreman, Stove-top, Broil, Grill, etc) but the way you prepare the patty is key! Here is what we did.
- Mix the ground beef, bleu cheese, a teaspoon of minced garlic and a dash of salt & pepper in a bowl together. We added the bacon to the top this time, but you could add bacon crumbles into this mixture as well.
- Form each patty to the size that you wish.
- When you grill or broil these burgers, add a little extra bleu cheese crumbles to the top of the burger. It will melt slightly and add some additional flavor.
- Here is where you cook your burger the way you desire. We used the George Foreman, since it’s the quickest and least messy option we had.
- Once the burger is done, add your favorite toppings and serve with a side of Sweet Potato fries and some Lipton Fresh Brewed Iced Tea! The perfect summer evening family meal.
Once dinner was over, I had promised Lennox Ice Cream for dessert, but before it was time to indulge, we decided to go outside and play in the nice evening weather! Lennox got this new pink ball (I think it looks like a dinosaur egg..) and she loves making up new games for us to play with it.
We played keep away, and some version of four square, and some other random games. Then she decided to make up her own game. The game itself, was honestly, a little pointless! BUT the way she explained the directions was just so cute and funny! I think Kyle and I watched this video 10 times in a row the other evening. The inflections in her voice crack me up – I had to share it with you.
Once we were done playing, we were ready for some Ice Cream! I picked up a variety of ice cream treats while at Walmart. I got my favorite, Ben & Jerry’s and also the classic, Klondike bars! What would you do, for a Klondike Bar? (Now you can have that song stuck in your head, you’re welcome!!).
Kyle loves Klondike bars, so he went right for those, while Lennox and I made ice cream sundaes. I couldn’t turn down Ben & Jerry’s ice cream. I went to school in Vermont, the home of Ben & Jerry’s – just a few exits on the highway from the factory and steps from the scoop shop; it will always be one of my favorite ice cream companies.
Anyway, Lennox chose Cherry Garcia – a tried and true Ben & Jerry’s flavor and I chose Peanut Butter Fudge Core. This is a variation of one of my favorite Ben & Jerry flavors! The fudgy peanut butter core is amazing.
Lennox took a scoop of ice cream and then topped it with a bunch of hot fudge, cherries, whipped cream and rainbow sprinkles! Really, what more could you ask for, for dessert in the summer, when you are a kid?
This was a great family evening and a great all-American summer meal! Get back to the basics and make a true summer meal and spend the evening with your family, rather than spending hours in the kitchen!
