Lennox’s First Daddy / Daughter Dance

Saturday evening was Lennox’s very first daddy / daughter at our local community center! She just couldn’t wait for it to begin. She did ask me a few times, if I was going to go as well, but the answer of course was no! It was time for the two of them to have fun and be together! When it was finally time to get ready, she got her hair done (she requested it be straightened), got dressed and put a little lipstick and blush on! She was ready to go… after she checked herself out… of course! No surprise there!daddy-daughter-dance-bw daddy-daughter-dance-bw2The other weekend I brought Lennox to pick out her dress and she picked this beautiful pink dress – extra fancy – and again I’m sure no one is surprised!!!daddy-daughter-dance-02

I will say, when did she get so big? This is about what her future prom picture will look like I think! Before they ran out the door (in a hurry as usual!) I had to snap a few pictures of Lennox and Kyle together. I just love how they came out!

And a little crazy-face from Lennox!daddy-daughter-dance-03I received a few photos and videos throughout the evening, but one of the highlights for her were that a few of her friends were there AND Elsa & Olaf! Elsa sang Let it Go and Olaf was around for warm hugs!


And do you ever wonder what exactly they play at daddy daughter dances? Well, apparently there is A LOT of Taylor Swift but there is also this little number … !

Anyway, they had a great time and I look forward to the fact that it can be a new yearly tradition for the two of them to do! I know I enjoyed a few hours to my self and they had a good time too!

Lennox – A Dancing Queen!

This week we are signing Lennox up for Dance Class at school. One of the many things I love about Lennox’s school is that they bring a lot of extra curricular activities into the school during after care so that we don’t have to run around to 10 different places for Lennox to be able to participate. TOTS basketball was the activity she chose to do participate in last year, but this year she has made it clear that she wants to be in dance!

She is our little dancing queen – she loves watching ballet on tv, dancing to music, and trying out some new moves! At the big consignment sale I shopped at this past weekend, I was able to pick her up some tap shoes! Her new dance class will be both ballet and tap – so one thing is marked off the list to buy!

She was so excited that I got them that she put them right on (even before I had any tie or ribbon to put on them) and started dancing away. I am unsure how she has learned a few of the tap moves she knows – but it must have been the summer activities she did at school! She set up some chairs, her stuffed animals (and me) and put on a little show for us – I had to share the video!

I can’t wait to watch her as she learns how to dance!

The Best Bacon Bleu Burger Recipe

Celebrate Summer with an All-American Family Dinner

It’s sum-sum-summertime! With summer brings long evenings of fun outside, easy dinners, family time and cold desserts (read, ICE CREAM!). This weekend we kicked off the summer by having an easy, yet delicious dinner – Bacon Bleu Burgers, Refreshing Iced Tea and an Ice Cream Treat from Klondike and Ben & Jerrys! Everything I got was from our local Walmart too!

Before I even started making dinner – I made a fresh pitcher (check out this awesome new mason jar pitcher I got at Walmart) of Lipton Fresh Brewed Iced Tea. I never enjoyed iced tea as a kid but I love it now. It’s a staple of the south. Lennox loves unsweet tea, as much as Kyle & I do too!


Once I had a cool drink, it was time to get dinner going for the family. We made an All-American meal that consisted of one of the best bacon bleu cheese infused burgers we have made! This recipe is easy, but I thought I would share with you how we made it, so that you can do the same this summer.

The Best Bacon Bleu Burger Recipe

What you will need:

  • Lean Ground Beef
  • Bleu Cheese Crumbles
  • 1 tsp. Minced Garlic
  • Salt / Pepper
  • Bacon
  • Onion
  • sautéed Jalapenos (optional)
  • Hamburger Buns
  • Any other toppings you like on your burgers!

Cooking Directions:

You can cook these burgers any way you wish (George Foreman, Stove-top, Broil, Grill, etc) but the way you prepare the patty is key! Here is what we did.

  1. Mix the ground beef, bleu cheese, a teaspoon of minced garlic and a dash of salt & pepper in a bowl together. We added the bacon to the top this time, but you could add bacon crumbles into this mixture as well.
  2. Form each patty to the size that you wish.
  3. When you grill or broil these burgers, add a little extra bleu cheese crumbles to the top of the burger. It will melt slightly and add some additional flavor.


  4. Here is where you cook your burger the way you desire. We used the George Foreman, since it’s the quickest and least messy option we had.
  5. Once the burger is done, add your favorite toppings and serve with a side of Sweet Potato fries and some Lipton Fresh Brewed Iced Tea! The perfect summer evening family meal.


Once dinner was over, I had promised Lennox Ice Cream for dessert, but before it was time to indulge, we decided to go outside and play in the nice evening weather! Lennox got this new pink ball (I think it looks like a dinosaur egg..) and she loves making up new games for us to play with it. lennox-playing-outside

We played keep away, and some version of four square, and some other random games. Then she decided to make up her own game. The game itself, was honestly, a little pointless! BUT the way she explained the directions was just so cute and funny! I think Kyle and I watched this video 10 times in a row the other evening. The inflections in her voice crack me up – I had to share it with you.

Once we were done playing, we were ready for some Ice Cream! I picked up a variety of ice cream treats while at Walmart. I got my favorite, Ben & Jerry’s and also the classic, Klondike bars! What would you do, for a Klondike Bar? (Now you can have that song stuck in your head, you’re welcome!!).


Kyle loves Klondike bars, so he went right for those, while Lennox and I made ice cream sundaes. I couldn’t turn down Ben & Jerry’s ice cream. I went to school in Vermont, the home of Ben & Jerry’s – just a few exits on the highway from the factory and steps from the scoop shop; it will always be one of my favorite ice cream companies.

Anyway, Lennox chose Cherry Garcia – a tried and true Ben & Jerry’s flavor and I chose Peanut Butter Fudge Core. This is a variation of one of my favorite Ben & Jerry flavors! The fudgy peanut butter core is amazing. ben-jerry-make-your-own-sundae

Lennox took a scoop of ice cream and then topped it with a bunch of hot fudge, cherries, whipped cream and rainbow sprinkles! Really, what more could you ask for, for dessert in the summer, when you are a kid?ice-cream-sundae-making

This was a great family evening and a great all-American summer meal! Get back to the basics and make a true summer meal and spend the evening with your family, rather than spending hours in the kitchen!
