Chicken Caesar Salad Pocket Sandwiches

Censie is back today to share another great post of hers – this time it some delicious food! These Chicken Caesar Salad Pockets look absolutely delicious and I know i’ll be making this recipe when we get back home!

Chicken Caesar Salad Pocket #Recipe.  Crock Pot Chicken Caesar Salad Recipe

Ingredients:

  • 2-3 large chicken breasts
  • Head of Romaine lettuce
  • 1 cup of your favorite Caesar Dressing
  • 1 Avocado
  • 1 1/2 cup Parmesan Cheese, shredded
  • 1/2 cup chopped fresh parsley
  • Croutons
  • Pepper to taste
  • 2 cups of water

 Directions:

1. Place the thawed chicken breasts into a Crock Pot with 2 cups of water.

2. Add Pepper to taste.

3. Set Crock Pot to medium – cook chicken for 4-6 hours.

4. After the 4-6 hours. Remove the chicken using a slotted spoon.

5. Shred the chicken with a fork and knife on a separate plate.

6. Dump the water out of the crock pot. Once the chicken is shredded add it back into the empty Crock Pot.

7. Add the Caesar Dressing, Parmesan Cheese, and parsley to the chicken. Mix well.

8. Heat mixture on High for 30 minutes.

9. Once the mixture is warmed and the cheese is melted build the Chicken Caesar Salad Pockets.

10. Stuff the pockets with Chicken, Romaine Lettuce, Avocado, extra Parmesan Cheese and Croutons!

No Bake Coconut Snowballs Candy Recipe

These no bake coconut snowball candies are the perfect sweet treat to bring to a party, prepare when you have someone coming over or even just when you want a sweet treat at home! They only take about 10 minutes to make and require no baking. If you like Almond Joys or Mounds, you are sure to enjoy, what I call, Coconut Snowballs!

No Bake Coconut Snowballs

Ingredients:

  • 2 Cups Shredded Sweetened Coconut
  • 1 Stick Salted Butter, Melted
  • 1 Cup Powdered Sugar
  • Dark Chocolate Melting Chocolate

Directions:

  1. In a large mixing bowl, combine 2 Cups shredded sweetened coconut and powdered sugar.

  2. Once mixed together, add in 1 cup of melted salted butter and mix together.

  3. Keep mixing until a thick mixture is created – you may even need to use your hands at this point to make sure the mixture is somewhat even!
  4. Taking small scoops, create small (1″ or so) balls out of the coconut. They don’t need to be perfect in shape, just use your own judgement on shape and size!

  5. Place the balls on a sheet of wax or parchment paper.
  6. Keep creating the small coconut balls until all the mixture is gone.
  7. Melt the Dark Chocolate Melting Chocolate, according to the directions on the package (usually microwaving at 30 seconds at a time between stirring).

  8. Once melted, dip the bottoms of all the candies in the chocolate and place back onto the parchment paper to dry. Tip: Use a spoon or cake ball dipper to dip these, as they may start to fall apart.

  9. Use the extra chocolate to drizzle the tops of all the candies.

  10. Let dry at room temperature for about 1 hour.
  11. Refrigerate or serve!

That’s it! I told you it was easy! I made these on New Years Eve and they were a big hit! Let them dry, put them on a cute plate and you are ready to head out the door!

Orange Sweet Potato Casserole Recipe

The dish I always seem to make on Thanksgiving and Christmas is Sweet Potato Casserole but with a touch of orange! I just love the tang it adds and it even cuts the sweetness in a way. It’s a super simple recipe that you can get together in less than 30-40 minutes. I was able to make it Thanksgiving morning while getting ready to head out the door to my mother-in-laws house (while getting Lennox ready too!)

Ingredients:

  • 6-7 Sweet Potatoes
  • 1/2 cup orange juice
  • 2/3 cup brown sugar
  • cinnamon
  • 1 stick of butter
  • 1 bag of mini marshmallows

Directions:

  1. Bring a large pot of water to a boil.
  2. While you are waiting for the water to boil, peel and cut up the sweet potatoes into small pieces. The larger the pieces, the longer it will take to cook – so keep this in mind. I tend to slice them and then cut each slide into 2 or 4.

  3. Once the water is boiling, add the sweet potatoes and boil for 15-18 minutes or until tender.
  4. Drain water and return to pan. Add in 3/4 stick of unsalted butter (cut into pieces to melt faster).
  5. Mash sweet potatoes slightly so that the butter melts.

  6. Add in 1/2 – 2/3 cup of brown sugar (depending how sweet you want the casserole to be), a few pinches of cinnamon (again, to taste) and 5 tablespoons of orange juice (I sometimes add more when I’m done if its not orange-y enough!).
  7. Mash all together until well mixed.
  8. Spoon into an oven safe casserole dish and top with mini marshmallows.

  9. If serving right away, place under broiler for 2-3 minutes (watching them the whole time) to melt and brown the marshmallows. If preparing ahead of time – bake in oven at 350 for 15-20 minutes until warmed and marshmallows are melted.
